I thought Inception was fun in a "keep concentrating or you lose the plot entirely" sort of a way. And with all the mid-20th century sharp suits and slicked back hair it was rather gorgeous to watch. But I agree with you that the dreams weren't that dreamlike. Classy hotels and big snow mountains are a tad boring really.
In terms of films about dreams, have you ever watched Paprika? It does fairly well in trying to capture what dreams feel like. The opening credits are particularly nice.
